Recipe - Somewhat Thai-like Chicken and Mushrooms
Put a bowl full of dried shiitake mushrooms in water to soak.
Cut 4 chicken thighs into 1-inch cubes and put in a medium to large casserole dish.
Slice a good number of carrots long ways (into thin planks), then across bias-wise, so you have flat diamond or parallelogram shapes. (There must be a culinary term for this shape.) Add to casserole dish along with a few cups of frozen peas. Squeeze out and slice the mushrooms, and add them as well.
In a bowl, mix one can coconut milk with some of the mushroom water. Season to your liking with curry powder, ground sichuan peppercorns, Thai fish sauce, and bullion or soup base. Add salt if it needs it.
Cover chicken and vegetables with sauce. Bake covered at 350 for 45 minutes. Serve over rice.
